OKC Restaurant Managers Step Up to Help Fill the Gap amid Worker Shortage

from Mecca Rainy at KOCO 5 News Birra Birra is a popular spot in the growing Chisholm Creek area in north Oklahoma City. It was a great place for people to gather, eat and spend a nice night out. But when the COVID-19 pandemic hit, everything changed.”It was difficult,” Birra Birra general manager Justin McCrary said. “Nobody saw it coming, and there’s no playbook, so to speak, as what was the right or wrong thing to do.”But the restaurant managed via to-go orders and discounts. It survived, and clientele quickly returned once the mask mandate was lifted.People opted for indoor and patio seating, and socializing was no longer on pause. “And then, when things started to calm down, the economy started to rebound, our business level picked up,” McCrary said.

But the same couldn’t be said about the job applicants. “It was definitely strange because, especially in the early spring, that’s when people are looking for restaurant jobs because summer is coming and it’s patio season,” McCrary said. “That’s when places are really, really busy, and it was just very strange because nobody was coming in the door.” It was rough for Birra Birra. “Couldn’t get anyone to apply or interview, and it was tough for a while,” McCrary said. So, he, other managers and owners across the board stepped up to fill in the gaps. “We wanted our staff to know we were there for them and supported them,” McCrary said. “So, managers were throwing on aprons and washing dishes or taking tables because we didn’t want guests to be turned away.”

Oklahoma City, February 8, 2021 – Will Rogers World Airport and award-winning airport concessionaire Paradies Lagardère, with approval of the Oklahoma City Airport Trust, announce plans to redefine the traveler experience with an array of new retail stores and restaurants. The vision for this effort, originally unveiled through a competitive request for proposals, will deliver 17 new concepts that offer travelers iconic national brands and also established local favorites from the community.

Due to the coronavirus pandemic, the timeline to unveil the full program will be altered across different phases proportionate to returning passenger levels. Each location will be assessed and executed in a responsible and sustainable manner.

From the very beginning of this process, Paradies Lagardère prioritized the concept of highlighting unique local offerings, and I’m delighted with the work they’ve put into it. The concession plan they are advancing will be a love letter to Oklahoma City, and that’s exactly what we deserve. We look forward to this partnership.”

“We greatly appreciate our long-standing partnership with Will Rogers World Airport and applaud their forward-thinking efforts in evolving their overall concessions program to reflect the new reality of today and the future,” said Gregg Paradies, President and CEO of Paradies Lagardère. “We are confident that our offering of exciting local and national concepts will exceed the expectations of OKC travelers.” Read more on OKC Talk.

Two-story BBQ Restaurant to Open at Chisholm Creek

From OKC Talk – Provision Concepts, proprietors of Broadway 10 Bar & Chophouse, Hatch Early Mood Food, Sidecar Barley & Wine Bar, Birra Birra Craft Pizzeria, Bibi’s Ice Cream, and Chicken Foot continue to grow their footprint with an ambitious new restaurant and entertainment venue: Bandee’s BBQ.

Bandee’s will transform the former 2-story Republic Gastropub space in Tract 30 in the Chisholm Creek development on Memorial Road between Western and Penn.

Experienced with live music at the popular Sidecar also in Tract 30, owners Aaron Soward and Jeff Dixon will install a large stage upstairs and a smaller version on the main level for live music performances. The upstairs setting will include an extensive house sound and lighting system.

Overhead doors on the ground floor will open to a large mostly covered patio area with heaters that will provide ample seating amid extensive landscaping.

A dedicated ToGo transaction counter will facilitate curbside pickup and delivery.

Large bars on each level are also in the plans.

Jeff Dixon told OKCTalk, “There isn’t enough room in the existing kitchen to do barbeque right so we are building an exterior smokehouse just north of the parking garage. We have three one thousand gallon offset smokers being built right now as well as two rotisseries. Nothing beats prime brisket cooked slow and low all day with real wood.”

Bandee’s hopes to open in May. Read more on OKC Talk.

Local Restaurant Groups Take Different Approach to Reopening

The Aggressive Approach – Provision Concepts

(By Peter Brzycki the Oklahoma Gazette) Broadway 10 Bar & Chophouse, Hatch Early Mood Food, Sidecar Barley & Wine Bar, Birra Birra, Bibi’s Ice Cream, Chicken Foot

Five years ago, Hal Smith Restaurants alums Jeff Dixon and Aaron Soward came out of the gate swinging with very ambitious Broadway 10, closely followed by tiny but stylish Sidecar Barley & Wine Bar, both in Automobile Alley.

The group now has seven locations operating and five more in progress, and it doesn’t show any signs of slowing down, regardless of the COVID-19 outbreak.

In a recent interview, Dixon recognized the responsibility to the community but also to the group’s employees and patrons, choosing “fight” rather than “flight” as a strategy.
Provision never laid off any of its 300 employees and kept its salaried managers and chefs on full pay, even making good on bonuses when revenue slipped after being forced into a pure carryout model by the city and state.

All Provision restaurants offered 50 percent off their menu prices during the closures and did all they could to remain relevant to their patrons and, as a result, experienced steady business.

At every turn in the phased reopening, Dixon said they have done as much as the laws allowed while taking serious precautions, even hiring a tailor to create hundreds of masks when none were available.

“We knew we weren’t going to be able to please everyone, but from day one, we decided to buckle down, cut our menu prices, take care of our employees and their families and work every day to keep our customers,” said Dixon.

In fact, the group sees a very bright future and has recently doubled the rooftop bar of Sidecar Chisholm Creek and will be opening Chicken Foot, a new fried chicken and cinnamon roll concept, in the Chisholm space recently vacated by Hopdoddy Burger Bar.
In addition to Broadway 10, there are now two Sidecar and two Hatch locations in Oklahoma City as well as Birra Birra and Bibi’s Ice Cream.

Provision hopes to open Chicken Foot in September as well as a Hatch and Sidecar on Cherry Street in Tulsa this fall, followed by another Hatch and Sidecar in 2021. And Dixon said there are more locations in the works. Read more on The Oklahoma Gazette.
